Along with summer internship application deadlines and chances to see your home friends, winter break likely brought yummy home-cooked meals. No one can really do it better than your parents, but HUDS’s selection of ingredients gives you a shot at making something even Gordon Ramsay would be proud of. Next time you’re looking for something new to try in the dining hall, turn to one of the recipes below to get your delicious fix!
Thai Peanut Lettuce Wraps
In a small bowl, combine a couple tablespoons of soy sauce with one tablespoon of peanut butter and one of sriracha. Mix until smooth to get a delicious Thai-inspired peanut dip, then add more soy sauce or peanut butter to taste. Toss shredded carrots, cucumber, your protein (chopped into bite-sized pieces), edamame, and beets in another bowl with one to two tablespoons of the peanut dipping sauce. Stuff your lettuce leaves with this oh-so-delicious mixture and enjoy a healthy Asian-inspired lunch that’s good enough to beat Spicies.
Harvest Bowl
Craving a Sweetgreen harvest bowl, but lacking the funds for it? Toss together mesclun greens, beets, and sweet potato pieces from the salad bar. Add a cubed apple for crunch and sweetness, plus a spoonful of brown rice for more substance. If you’re an omnivore, add some chicken from the salad bar and mix everything together. Throw on some of the roasted soy almond blend (located next to the bougie sunbutter flavors that you’ve never tried) for a crunchy and chewy topping. Finally, drizzle your salad with a tablespoon or two of balsamic vinegar.
Bruschetta
Grab a few baguette slices and throw them in the toaster. While your bread is toasting, slice some cherry tomatoes and toss them in a drizzle of olive oil. Add garlic powder, salt, and pepper to taste. Top the toasted bread with the tomato mixture and enjoy. It’s so good that you’ll regret not spending the semester abroad.
Peanut Butter and Jelly Yogurt Parfait
Switch up your plating and get those ~presentation~ points by layering yogurt, peanut butter (or sunflower seed butter), jam, and granola in the glass drinking cups. It’s a blast from your kindergarten past as well as a sophisticated dessert fit for a college student.
